Recipe for squirrels ?

I was listening to Huckabee.Recipe for squirrels ?
Use a rabbit reciepe and cook it like a rabbit. They are all wild game.Recipe for squirrels ?
No cooking method beats frying - Beer battered fried squirrel. Side of hot sauce
just salt and pepper and roll in flour.
I think he looks like a rabbit with those long, yellow teeth! Don't you?





Anyway, Squirrel Recipe: You asked for it, you got it!





BBQ Squirrel





~ 4 squirrels, dressed and quartered


~ 3 tbsp salt


~ 2 tsp pepper


~ 1 tsp garlic powder


~ 1 tsp onion powder


~ your favorite dry rub


~ 15 charcoal briquets


~ 3 handfuls hickory chips


~ your favorite bbq sauce





In a large pot, boil the squirrel in water seasoned with the salt, pepper, garlic powder and onion powder for 1 hour or until tender.





In the meantime, soak the hickory chips in water. Light the charcoal and let them get white hot. Place them to one side of your grill.





Remove the squirrel from the water and pat dry. Coat with your favorite dry rub.





Add one handful of wood chips to the hot coals.





Place squirrel on grill across from the hot coals. Cover and smoke for 1 hour. Add a handful of wood chips every half hour.





Add last of the wood chips and baste squirrel with bbq sauce. Smoke for another half hour basting another 3 - 4 times.





Serve with mashed potatoes, sweet corn and buttermilk bisquits.

BROCCOLI SQUIRREL CASSEROLE





6 squirrels


1 bag frozen broccoli pieces


1 lg. onion


4 carrots


Bread crumbs


1 (8 oz.) pkg. sharp cheddar cheese


8 oz. light cream


1 c. butter


Basil to taste


1 tsp. lemon juice





Skin clean and quarter squirrels. Boil in large pot with water and chicken bouillon cube until tender. Set aside until cool and then bone completely until only meat remains.


Microwave broccoli until warm but not fully cooked. Cover bottom of buttered lasagna sized pan with broccoli placing meat over broccoli layer. Lightly cook carrots until tender and place over meat layer. Lightly cook carrots until tender and place over meat layer. Grate cheese over top and cover cheese with bread crumbs. Mix sauce of light cream or milk with mayonnaise, basil and lemon juice and warm. Pour sauce over all and add milk until at least 1/4 inch depth liquid. Bake at 350 degrees for 45 minutes or until sauce is bubbling. Be careful not to burn cheese and bread crumb topping








OR








CHICKEN OR SQUIRREL DUMPLINGS





1 c. self-rising flour


1 c. all-purpose flour


1/2 tsp. salt


2 tbsp. ice water


1 egg blended with 1/4 c. milk


3 tbsp. Crisco


Hen or 2 squirrels


2 tbsp. flour dissolved in 1/2 c. milk





Simmer hen or 2 squirrels until tender. Remove hen and save broth. Blend flour, salt and Crisco. Add half of egg mixture. Then add 2 tablespoons ICE COLD WATER. Form a ball. Roll out on wax paper that has been floured. Roll until thin.


Cut and drop into boiling broth. Cook 5 minutes. Then add 1/2 stick butter and the milk mixture. Salt and pepper to taste. Add chicken or squirrels. Debone first, if preferred. Heat about 5 more minutes and serve
